NO BAKE Easy Vegan Nut Butter Bars

Hi Guys!

It has been a while ! I am back to work from maternity leave, started teaching for FIT4MOMSCV and have a energetic 7 month old! I wanted to share a recipe that I L I V E D off of ( let’s be honest LIVE off of) all during my maternity leave. These easy vegan bars helped with my milk production, taste amazing and kept me FULL !

Nut Butter Vegan Oat Bar

Vegan Chocolate Sauce

  • Coconut Flakes
  • Cacao Nibs
  • 4 tablespoons of coconut oil
  • 2 of maple syrup
  • 4 tablespoons of cacao
  • 4 tables of almond butter

Directions

  1. Line an 8-inch pan with parchment paper.
  2. In a medium bowl that is safe for the microwave melt the peanut butter/almond butter and maple syrup for 20-30 secs.
  3. Add in the oats and fold together.
  4. Press the oat mixture into the 8-inch pan pressing down firmly.
  5. Sprinkle some coconut flakes and cacao nibs on top of the oat mixture
  6. In another microwave bowl, heat the coconut oil, maple syrup, and almond butter.
  7. Stir coconut oil, maple syrup and almond butter together with the cacao.
  8. Pour this chocolate mixture over the bars and sprinkle again with coconut flakes and cacao nibs for extra chocolaty goodness!
  9. Freeze for 30-40 minutes, or until firm. Remove from freezer and slice and ENJOY!

5 Tips to Going Vegan

5 Tips to going Vegan

  1.  Know your reason why you want to become vegan. Are you doing it for health reasons, the environment or for the animals? When you feel like you’re struggling go back to this and remember the reason you are doing it in the first place.
  2.   Go at your own pace. I did not turn vegan overnight and you might not either. That is OK! Every step you make is another step in the right direction. You will get there ! There are also tons of facebook groups you can join in order to get help from others as well!
  3. Be prepared for questions and comments from others. Your eating will not be the hardest part about going vegan, at least it wasn’t for me! The social aspect is much harder to deal with then not eating any animal products! You will get the question about where you get your protein(which you can state from beans, quinoa, brown rice, vegetables, lentils etc) and you will here the comment “I could never give up meat or cheese” over and over and over again. Let this roll off your shoulder. Those who want to listen and care will. It’s not worth getting into an argument over. People always have opinions so just humble yourself and keep moving on to a healthier lifestyle !
  4. Buy some vegan cookbooks and clean out your fridge! This is so easy and fun ! If you don’t have any animal products in your house you are less likely to eat them ! So get rid of them and open up a new cookbook and get cooking ! You will not only feel better with this lifestyle but will have more energy to be able to cook! Raw Vegan Caramel Sauce- Easy and Healthy!

Today I wanted to share with you Raw Vegan Caramel Sauce that is easy and healthy! Dates are excellent source of iron, fiber, antioxidants and has been said to help with a faster labor ! I ate dates throughout my last few weeks of labor and had a 10 hour labor. I am not sure if they contributed but they’re so delicious I would eat them again!

What you will need:

10-20 Organic Medjool Dates ( I usually use Medjool Dates but have used Barhi and Honey !)

Filtered Water

Food Processor or Vitamix

Plant Based Diet-Why did I choose this lifestyle?

 

It’s crazy to try and think back to a time when I wasn’t vegan and eating a plant based diet . I don’t even remember the exact point in time that I became vegan, but can tell you the more I learned about a plant based diet, the more I knew I wanted to eat that way. When I moved to Southern California, I started watching documentaries about food, health and a plant based diet. I was vegetarian for probably less than a year before becoming vegan. The closer I got to a plant based diet, the better I felt. First, I gave up meat, then milk and then cheese. Cheese was the hardest to give up because I loved my wine and cheese pairings! Once I gave up cheese, I started to notice a difference right away. I had more energy and didn’t get that afternoon slump as I normally would have. I started to have an increase in energy which led me to have better workouts. I simply started to feel better. I also noticed after a few months that I stopped having headaches and migraines. This alone was enough to keep living this lifestyle. 5’ish years later I can now without a doubt say that eating a plant based diet has changed my life. I have become healthier, more physically fit and had an amazing pregnancy. Some of my most favorite documentaries on a plant based diet are:
